Blade & Bow Kentucky Straight Bourbon

This tasty-train of Bourbon will one day come to an end, so make sure you get a sip.

Founded by Julian “Pappy” Van Winkle himself, The Stitzel-Weller Distillery is stuff of Bourbon legend, where some of the most sought after Bourbons were once made.

Since the distillery was closed in 1992, Whiskey fans have screamed for more magic juice from this mythological still. Diageo has responded by pulling off some alchemy and blending the last casks solera-stye with other premium Bourbons to give us Blade and Bow Bourbon.

The last drops of Bourbon from a legendary still, squeezed into a bottle.

The Stitzel-Weller Distillery is stuff of Bourbon legend. It was founded on Derby Day in 1935 by Julian “Pappy” Van Winkle himself and some of the most legendary Bourbons and brands were made there. The distillery itself was closed in 1992 and is now a museum-like adjunct of Bulleit Bourbon Experience, owned by Diageo. But there is a lot of left-over Weller Bourbon in the storage lofts, along with “orphan” casks from other distilleries. Blade & Bow Bourbon blends these Bourbons solera-style to produce their range of two Whiskeys.

Blade & Bow Bourbon Straight Kentucky Bourbon Whiskey… the first thing you might notice is there is no age statement. Don’t let that throw you. Since this is a blend of orphan casks, accurately stating the age would be a near impossibility. But this is all premium aged spirit aged in all the right ways, and blended from some of the finest Bourbon distilleries in the world. It’s rich and thick and you should judge it with the tongue. And due to the fact that no more Whiskey flows from the stills at the Stitzel-Weller Distillery, this tasty-train will one day come to an end, so make sure you get a sip first.

Single Malt Scotch Whiskies goodness is directly proportional to time in an oak cask in a bonded warehouse in Scotland.
Pure whisky according tp some is unchillfiltered, cask strength whisky.

Chill filtering:
Chill filtering is a method in whisky making for removing residue. In chill filtering, whisky is cooled to between -10° and 4° Celsius (often roughly 0°) and passed through a fine adsorption filter.

Cask Strength means bottled at over 50% alcohol by volume (ABV) or 100 proof in the American system

Single cask expressions are aged in one cask for the length of the time of maturation. Thus one knows exactly what whisky is in the bottle.

For example if you see a chart on a bottle with cask and bottle number, date of distillation and date of bottling you know what you are buying. It will also be a collectable as a finite number of bottles are manufactured.

So here is a single cask Highland Expression that you can look for.

Official Tasting Notes
Nose: Gentle and rounded with aromas of honey and vanilla complemented with oak and fruity-apple.
Palate: Spicy with fruity notes of banana, chocolate, creamy vanilla and a slight oaky bitterness rounded off with a warm, smooth, lingering finish with hints of spice, honey and leather.

Staff Tasting Notes
Nose: Initially very bourbon like with notes of vanilla, freshly sawn wood, then gets a little less oaky with sugared almonds, green apples and lemon curd. With water there’s sherbet lemons, green apple skins and cut grass
Palate: Lots of vanilla at first giving way to something sherbet like and effervescent which brings Refesher sweets to mind. Adding water brings a more creamy, fuller mouthfeel and the addition of marzipan and nougat. The finish is quite dry, peppery and oaky.
Overall: Very spritely for its age and full of complexity.

So If you are looking for a collectable this will do. if you are looking for a collectable and a good dram buy two bottles. I myself don’t have enough P (pence in Scotland) meaning pennies saved to buy two of any collectables. But the day is still young.

Today some distilleries are producing some expressions that would make mo clann very happy indeed. They like Islays and peated whiskies you see. And they like cask strength expressions.

So here are two interesting new expression from Tobemory

Two limited-edition malts, Ledaig 19 Years Old and Tobermory 21 Years Old, have been released by Distell’s Tobermory Distillery.

The Ledaig 19 Year Old (51% ABV) is some of the first spirit distilled when peated single malt production commenced at Tobermory distillery in the late 90s.

Peat-dried malted barley was married with naturally peat-infused water from a lochan high in the mountains above the village. The spirit was then matured in superior oak wood casks before being finished in Marsala wine casks.

Ledaig 19 Year Old will be available in specialist whisky outlets worldwide with an RRP of £125.

It is thought that this 19 year old Ledaig is from crafted from some of the first spirit made at Tobermory distillery once they begain using peated malt again in the 1990s. Rich, full and packing a mighty punch this is not a small statement from Mull’s only distillery.

I don’t know about you, but it offends me to see Hollywood show people enjoying guid single malt in highball glasses.

I mean, would you drink a martini in a shot glass? Or cognac in a highball glass? But I digress.

Description

Mike and Jason set up Bramble Bar in 2006, and we’ve been pals with them ever since. We were especially proud of them when they rose to world prominence, becoming the first and only Scottish bar on the coveted World’s Best 50 Bars list, and we see them as a trailblazer on the Edinburgh booze scene. Over a drink and a chat, we decided it would be cool to share an exclusive cask. So we did, and here it is. The result of us trying 12 different single cask samples, bottled at natural colour and strength without any chill filtration. It is taken from a single Pedro Ximinez sherry puncheon (cask number 27) and has produced a rich, meaty sherry cask dram, but one that still has balance. Sure, Glendronach has built its reputation on sherried beasts, but we’ve deliberately selected one that has balance and grace as well as gutsy brawn.
Official Tasting Notes
Nose: Raisins and golden sultanas drizzled with honey and dark chocolate, wall warmed by candied ginger and a touch of orange zest.
Palate: Stewed plums and orchard fruits caramelised in dark muscovado sugar, balanced by a warm oak spice and a vibrant
citrus twist.

Seems like everyone is starting to make whiskey these days.  Even the Welsh and the Sassonachs. Here is the newest I have run into from the Whisky Exchange:

Description

We’ve been fans of Taiwanese distillery Kavalan for a long time, and we are very pleased to have been offered the chance to bottle an exclusive single cask.

Matured in an oloroso-sherry butt, the whisky is deeply coloured and intensely flavoured. It marries Kavalan’s trademark fresh-fruit flavours with deep dried-fruit notes, and rich, nutty sherry-cask character. An excellent whisky that shows why Kavalan is getting so much notice

Nose

Fruity oloroso sherry with dry and nutty notes. Dates, prunes and aniseed develop. Old Cognac rancio adds savoury character

.Palate

Spicy with concentrated orange – zest, juice and sweet jelly. Barrel char turns to brûlée, black liquorice and rum-soaked raisins

.Finish

Spiced fruit cake fades to damp earth and baked apples.

Comment

An intensely flavoured dram, with lots of nuttiness and a careful balance of sweet and savoury.

There are too many actual Scotch whisky’s for me to sample without going into other countries expressions. But that is me.

A wee dissertation of pairing

Halo Single Malt Mates,

I have been experimenting with spicy food and single malt whiskies.

Now, Whisky pairs well with every food, I have found. but some pairings are better than others. A proviso. This is my humble opinion.

As usual and as always what  I think is great may not be thought of as great by others. Sad but true.

I paired kung pao chicken with a 17 year old Benriach cask strength matured in a sherry cask,

Since alcohol tamps down the heat of hot peppers this was a great pairing. Sherry and the spice went great. Says I.

Next I paired a  Mortlach 18 single cask with Kung Pao Chicken and it was slightly overwhelmed by the spice.

I paired Polo Loco chicken with Macallan 12 and the spice was interesting with the whisky.

Having said all of that food pairing brings out flavors in both the whisky and the food. I suggest you try it..

A wee bit of whisky opinion

There are four  kinds of Scotch Whisky

1Guaranteed age single malt Scotch Whisky. This means that the youngest matured whisky, from one distillery, in the bottle is the age statement. For example the Macallan 12. Now there may be older whisky’s involved but they do not have to be disclosed.

2 Blended malt Scotch Whisky.  This means that single malts from other distilleries are mixed together to form a new expression. For example, Johnny Walker Blue Label.

3. Blended Grain Whisky. This product is single malt or malts with neutral grain spirits added to make the blend cheaper to make and of course sell.

4. Non Guaranteed age Scotch whisky. A single malt or a blended malt or a blended grain whisky with no age statement. This means the distillery can sell any kind of whisky it desires with no limit on how old the base stock is. Of course except the mandatory age of three years and one day in an oak barrel matured in bonded warehouse for all Scotch Whisky..

My personal guru Ralfy of Glasgow claims that the average age of the whiskies in a non-guaranteed age expression is six years. This makes it cheaper to make and the distiller can get almost as much profit it wants depending on what the market will bear.

For example if a six year old whisky averages say 30 pounds sterling retail and the sexy advertising and labeling of the non guaranteed age whisky persuades buyers to spend 79 pounds sterling it is a great way to market whisky for the vendors and distillers.

Not so much for aficionados like me. However the cardinal rule of whisky tasting is :

If the whisky fits your budget and you don’t mind paying the price, then buy it and enjoy it…

Having said that it is your G-d given right as a honorary or actual Scot to obtain the best price for your whisky!
